The elongated taproot features a firm, dense orange flesh (due to high beta-carotene content) with a pale, woody core. Carrots develop their characteristic sweet flavor through cultivation and storage, as starches convert to sugars over time. Modern cultivars are predominantly orange, though heirloom varieties exist in purple, yellow, red, and white. The vegetable's flavor profile ranges from mildly sweet and earthy when raw to deeply caramelized and intensely sweet when roasted or cooked slowly.

Medium-sized carrots are one of the most versatile vegetables in global cuisines, equally suited to raw and cooked applications. Raw, they are used in slaws, salads, crudités, and juices; the medium size provides optimal texture and bite.
