Prunes originating primarily from California, France, and the Balkans are characterized by their deep mahogany-to-black color, wrinkled texture, and intensely sweet, slightly tannic flavor profile. The drying process concentrates sugars and develops complex caramel and molasses notes while reducing moisture content to approximately 30-35%, which contributes to their long shelf stability.
