Garden peas (English peas) are typically picked when pods are full but still tender, while snow peas and snap peas are eaten pod and all. The flavor profile ranges from starchy and earthy in mature dried peas to sweet and delicate in young spring peas, with a slight grassy undertone.

Pea varieties include garden peas (the most common culinary form), sugar snap peas with edible pods, snow peas with flat pods, and field peas used primarily for drying and splitting. Color may range from bright green to pale yellow or mottled varieties. The texture is firm when fresh but becomes increasingly tender with cooking.

Peas appear across global cuisines in both fresh and dried forms. Fresh peas are classically featured in French cuisine (petit pois), British preparations (mushy peas), Indian dal dishes, and Asian stir-fries.
