The seeds are characterized by their warm brown color, distinctive ridged surface, and longitudinal stripe down the center. Cumin possesses a warm, earthy, slightly nutty flavor with subtle citrus undertones and aromatic essential oils (primarily cuminaldehyde) that contribute to its pungent, complex taste profile. The plant grows to approximately 30 cm in height and produces delicate flowers before seed maturation. Major cultivars include white cumin (the most common variety), black cumin (kala jeera), which is rarer and more aromatic, and amber cumin.\n\nThe spice is used both whole and ground. Ground cumin is produced by drying the mature seeds and then milling them to a fine powder, a process that concentrates the essential oils and flavor compounds.
