The outer leaves are darker and more fibrous, while inner leaves are tender and crisp with a mild, slightly sweet flavor and high water content (approximately 95%). The texture is characteristically crunchy, making it distinctive among lettuce varieties. The name derives from the icelike appearance of the refrigerated heads, not from a connection to cold climates.

Iceberg lettuce develops through selective breeding for head formation and storage longevity, making it commercially resilient and long-lasting compared to loose-leaf varieties. It exhibits a pale interior due to reduced light exposure during head formation, concentrating chlorophyll in outer leaves while the protected core remains blanched.
