About

Iceberg lettuce (Lactuca sativa var. capitata) is a cultivar of common lettuce characterized by its dense, spherical head of pale green to white leaves tightly packed in concentric layers. Native to the Mediterranean region and developed in Europe, it emerged as a dominant market variety in the United States during the early 20th century. The leaves are crisp, watery, and mild in flavor, with a firm, almost crunchy texture that persists even after refrigeration. The inner leaves are progressively lighter and more tender than the outer leaves, which are darker green and slightly more fibrous.

Iceberg lettuce is the most widely cultivated and commercially produced lettuce variety globally, accounting for a significant portion of fresh salad greens in North America and Europe. Common cultivars include 'Crisphead,' 'Batavia,' and numerous greenhouse-adapted hybrids bred for uniformity, disease resistance, and extended shelf life.

Culinary Uses

Iceberg lettuce is primarily used raw in salads, where its crisp texture provides structural integrity and a refreshing crunch that holds up well when dressed. It serves as the foundational green in classic preparations such as the Caesar salad, wedge salad, and composed salads. Beyond salads, iceberg lettuce leaves function as edible vessels for wraps, lettuce cups, and Korean-style ssam preparations. The outer leaves, though more fibrous, can be braised, sautéed, or added to soups and stir-fries, though such applications are less common in Western cuisines. Its mild flavor makes it an ideal neutral base that accepts a wide range of dressings and accompaniments without competing with other ingredients.
