The pepper typically measures 1-3 inches long and ranges in color from green when immature to bright orange, red, or chocolate brown when fully ripe, depending on variety. It possesses a fruity, citrus-forward flavor profile with pronounced heat ranging from 100,000 to 350,000 Scoville Heat Units (SHU). When seeded—a common preparation to moderate heat while retaining flavor—the placental tissue and seeds, which contain the majority of capsaicinoids (the compounds responsible for pungency), are removed, leaving the fleshier portions that carry the characteristic fruity, slightly smoky notes.
