Green zucchini (Cucurbita pepo) is a summer squash cultivar belonging to the gourd family, native to Central and South America but popularized in Mediterranean cuisines, particularly Italy. The fruit is an immature squash with thin, edible dark green skin, pale green to white flesh, and small, soft seeds. Botanically a berry, zucchini has a mild, slightly sweet flavor with delicate vegetative notes. The texture is tender when young and cooks quickly due to its high water content (approximately 95%). Several varieties exist, including the common straight-necked cultivar and the rounder, ball-shaped varieties like 'Ronde' de Nice.

Green zucchini is most prized when small (6-8 inches), as larger specimens develop tougher skin, more prominent seeds, and watery flesh. The flavor intensifies slightly with maturity but remains consistently mild.

Culinary Uses

Green zucchini is extensively used in Mediterranean, Middle Eastern, and global cuisines.
