Mâche is prized for its tenderness and does not require washing in the traditional sense due to its growing in lower-lying rosette patterns that shelter it from excessive soil contact. Several cultivars exist, including 'Verte de Cambrai' and 'Coquille de Louviers,' which differ slightly in leaf shape and size.

The plant thrives in cool, moist conditions and has been cultivated since at least the medieval period, particularly in Northern Europe and France, where it remains a staple of green salad preparations.
