Flat anchovies refer to cured, filleted anchovies that have been salted and preserved, then typically packed in oil or salt. These are generally small pelagic fish from the family Engraulidae, most commonly the European anchovy (Engraulis encrasicolus), though Pacific species are also used. Unlike whole or paste anchovy preparations, flat anchovies are butterflied or split lengthwise to create a flat profile, making them ideal for direct application to dishes. The curing process involves salt fermentation, which develops a deep umami flavor—pungent, salty, and intensely savory with subtle sweetness. The flesh becomes translucent and tender, ranging from pale to deep brown depending on cure time and salt content.
