filet of salmon

SeafoodPeak availability occurs May through September for wild Pacific salmon; farmed salmon is available year-round. Atlantic salmon availability is stable year-round due to farm production.

Excellent source of omega-3 polyunsaturated fatty acids (EPA and DHA), high-quality protein, and vitamin D. Also provides selenium, B vitamins, and astaxanthin, a potent antioxidant.

About

Salmon fillet is the boneless side cut from a salmon (Salmo salar and related Pacific species, family Salmonidae), consisting of muscle tissue and a characteristic layer of subcutaneous fat. This cut is obtained by filleting the dressed fish along the backbone, leaving the skin attached or removed depending on preparation preference. Salmon fillets are prized for their firm, flaky texture and rich, distinctly oily flavor profile with subtle sweetness. The flesh color ranges from pale pink to deep orange-red, depending on the salmon species, diet (particularly astaxanthin content in wild populations), and whether the fish is farmed or wild-caught. The fat content—typically 10-15% in farmed salmon and 4-8% in wild—is distributed throughout the muscle tissue and concentrated in the subcutaneous layer, contributing to moisture and flavor.

Culinary Uses

Salmon fillets are among the most versatile and widely consumed seafood preparations globally. They are suitable for virtually all cooking methods: pan-searing, poaching, baking, grilling, smoking, and raw preparation as sashimi or ceviche. In Western European cuisines, fillets are often pan-seared skin-side down to render the fat and crisp the skin, then finished in the oven. Scandinavian traditions embrace cured and smoked preparations (gravlax, lox), while Japanese cuisine features salmon prominently in nigiri sushi and sashimi. The flesh pairs well with acidic elements (lemon, vinegar), aromatics (dill, fennel), and rich preparations (butter sauces, olive oil). Fillets may be portioned into individual steaks or left whole; the skin provides structural integrity during cooking and adds flavor when crisped.
