Pearl onions, or small pickling onions (Allium cepa var. aggregatum in some cultivars), are diminutive bulbous vegetables belonging to the allium family, typically measuring 1–1.5 inches in diameter. Native to the Mediterranean and Central Asian regions, they are characterized by their round, papery white or golden-bronze exteriors and layers of mild, sweet flesh. Unlike larger onion varieties, pearl onions develop minimal central woody cores and possess a more delicate, less pungent flavor profile, making them distinctly suited to whole-bulb applications.

Pearl onions are available in white, golden, and occasionally red varieties. When raw, they present a crisp bite with subtle sweetness; when cooked, they become distinctly tender and develop a caramelized, almost buttery character. Their small size and ease of peeling after blanching make them particularly valuable for French and Italian preparations.

Culinary Uses

Pearl onions are prized for dishes requiring whole, visually prominent bulbs, particularly in classic French preparations such as coq au vin and beef bourguignon, where they braise alongside meat and develop a glossy, caramelized exterior. In Mediterranean and Scandinavian cuisines, they feature prominently in pickling applications, preserved in vinegar-based solutions with spices. Beyond braising and pickling, pearl onions are roasted whole to accompany game and poultry, added to creamed vegetable preparations, and occasionally skewered for grilling. Their mild sweetness and intact presentation make them suitable for both rustic and refined preparations.
