Coconut oil is a tropical fat extracted from the meat of mature coconuts (Cocos nucifera), a palm species native to Southeast Asia and widely cultivated throughout tropical regions. The oil is obtained by pressing dried coconut meat (copra) or by extracting the cream from fresh coconut milk. It is solid at room temperature (below 76°F/24°C) and liquid above this point, with a mild coconut aroma in virgin forms and neutral scent in refined varieties. Coconut oil contains approximately 90% saturated fat, predominantly medium-chain triglycerides (MCTs) including lauric acid, giving it a high smoke point and distinctive cooking properties.

Virgin (extra virgin) coconut oil is cold-pressed from fresh coconut meat and retains more coconut flavor and antioxidants, while refined coconut oil is bleached and deodorized through heat and chemical processing, resulting in a more neutral product suitable for applications where coconut flavor is undesirable.

Culinary Uses

Coconut oil is employed as a cooking medium in Southeast Asian, Indian, Caribbean, and Pacific cuisines, where it is fundamental to curries, stir-fries, and deep-fried preparations. The oil's high smoke point (approximately 350–450°F/175–232°C depending on refining) makes it suitable for high-heat cooking, though refined versions are preferable when strong coconut flavor is undesirable. Virgin coconut oil is commonly used in baking, desserts, and raw applications such as smoothie bowls and dressings, where its subtle coconut character enhances rather than masks other flavors. In vegetarian and vegan cooking, coconut oil serves as a dairy-free substitute for butter in pie crusts, cookies, and other baked goods.
