Peeled cucumbers are primarily water (95%), making them very low in calories while providing modest amounts of vitamin K, potassium, and antioxidants. The removal of skin eliminates some fiber and concentrated nutrients found in the peel, though the flesh remains hydrating and nutritionally light.

The cucumber (Cucumis sativus) is a creeping vine plant of the Cucurbitaceae family, native to South Asia but now cultivated worldwide. The fruit is a type of berry with thin, edible skin and watery, seed-bearing flesh. When peeled, the cucumber reveals its pale green to nearly colorless flesh beneath the darker outer skin, presenting a tender, refreshing texture. The flavor is subtle and slightly sweet with mild vegetal notes. Common varieties include the long, seedless English cucumber; the shorter, warty pickling cucumber; and the smooth-skinned slicing cucumber. Peeled cucumbers are preferred in applications where skin texture or bitterness may be undesirable, such as in certain salads, sauces, and refined preparations.

Culinary Uses

Peeled cucumbers are utilized across numerous cuisines, primarily in raw applications where their delicate texture and cool, hydrating quality are prized. They feature prominently in salads, gazpachos, and cold soups, often sliced or diced. In Middle Eastern and Mediterranean cooking, peeled cucumbers form the base of tzatziki and raita, yogurt-based condiments. Asian cuisines employ them in cucumber salads (Japanese sunomono, Thai salads), pickled preparations, and as refreshing side dishes. Peeled cucumbers can also be cooked—gently sautéed, braised, or added to stews—though extended heat diminishes their textural appeal. The removal of skin makes them particularly suitable for puréed preparations, infused waters, and elegant plating where visual refinement is desired.
