Coriander seeds are the dried, rounded fruits of Coriandrum sativum, an annual herbaceous plant native to southern Europe and the eastern Mediterranean region. The seeds are small (3-4 mm diameter), light brown to tan in color, with a distinctive ridged surface and hollow structure. They possess a warm, citrusy flavor profile with subtle woody and slightly sweet undertones, distinctly different from the fresh herb (cilantro) that comes from the same plant. The flavor becomes more pronounced and aromatic when seeds are toasted or ground, developing nutty and spicy notes.

Coriander seeds represent one of the oldest cultivated spices, documented in ancient Egyptian, Greek, and Roman culinary traditions. Major cultivating regions today include India, Morocco, Russia, and Romania, with Indian coriander—particularly from Rajasthan—considered among the highest quality varieties.

Culinary Uses

Coriander seeds are fundamental to Indian, Middle Eastern, and Latin American cuisines, appearing in curry powders, garam masala, and spice blends across these traditions. They are employed both whole and ground: whole seeds are often temppered in hot oil or ghee at the beginning of cooking to release essential oils, while ground seeds integrate into dry rubs, marinades, and baking applications. The seeds complement both savory dishes—particularly curries, pickles, and braised meats—and sweet preparations such as baked goods and beverages. In European and American cooking, they appear in pickling spices, sausage seasoning, and gin production. Light toasting before use enhances their citrus character and mitigates any musty notes.
