Cocktail cherries are preserved maraschino cherries, typically small cherry fruits (usually Prunus serrulata or similar sweet cherry cultivars) that have been pitted, bleached, and macerated in a sweetened syrup containing maraschino liqueur or almond-flavored syrup. Originating in the early 20th century, these bright red (or occasionally green or yellow) garnishes are a standardized commercial product distinguished by their uniform size, vivid coloring from synthetic dyes or natural colorants, and firm texture. The characteristic artificial cherry flavor comes from the maraschino processing rather than the fresh fruit itself, which loses most of its natural flavor compounds during production.

Culinary Uses

Cocktail cherries function primarily as a visual garnish and textural element in mixed drinks, particularly classic cocktails like the Manhattan, Martini, Sidecar, and Aviation.
