About

Coarse ground pepper is black pepper (Piper nigrum) that has been cracked or coarsely ground into granules rather than reduced to a fine powder. Black pepper originates from the Malabar Coast of India and consists of the dried, unripe berries of the pepper plant. The granules retain more of the essential oils and volatile compounds compared to finely ground pepper, resulting in a more pronounced aromatic profile and visible texture. Coarse grinding is achieved through mechanical cracking or grinding processes that fracture the peppercorns into irregular, chunky particles typically 2-4 mm in diameter.

Culinary Uses

Coarse ground pepper is used as a finishing spice and textural element in many cuisines, applied to dishes both during and after cooking. It is essential in Italian preparations such as cacio e pepe and popular for seasoning grilled meats, roasted vegetables, and seafood, where its granular form provides visual appeal and bursts of heat and flavor. The coarser texture allows the pepper to remain distinct on the plate rather than dissolving into a dish, making it ideal for surface seasoning, pepper-crusted preparations, and tableside applications. It pairs well with salt in compound finishing blends and is commonly featured in French, Italian, and contemporary American cooking.
