Black peppercorns are the unripe berries of the pepper plant, picked green and then sun-dried until they darken and develop a wrinkled, hard exterior. Coarse grinding—or "cracking"—breaks these dried berries into irregular fragments rather than pulverizing them to powder, resulting in particles typically 1-3 mm in diameter. The flavor profile remains pungent and sharp, with peppery heat derived from piperine alkaloid compounds, along with subtle warm and slightly citrusy notes that emerge during the cooking process. This texture distinguishes it from finely ground black pepper and whole peppercorns.
