Cinnamon powder is the finely ground dried bark of the cinnamon tree (Cinnamomum species), most commonly Cinnamomum verum (Ceylon cinnamon) or Cinnamomum cassia (Cassia cinnamon). The bark is harvested from cinnamon trees, dried until curled into quills, and then ground into a fine powder. Ceylon cinnamon, native to Sri Lanka, has a sweeter, more delicate flavor profile with complex spice notes, while Cassia cinnamon from Indonesia and Vietnam is more robust with a warmer, slightly bitter character and higher coumarin content. The powder ranges in color from tan to reddish-brown depending on the variety.
