chicken of about 1.5 kilos

MeatYear-round availability from commercial producers; quality and flavor may be superior when sourced from birds raised on pasture during spring and summer months.

Excellent source of lean protein and B vitamins (particularly niacin and B6); thighs and drumsticks provide additional iron and zinc, while skin is high in fat and should be removed for lower-calorie preparations.

About

Chicken is the domesticated fowl of the species Gallus gallus domesticus, a poultry raised globally for its meat and eggs. The bird is descended from the Red Junglefowl of Southeast Asia and has been selectively bred for thousands of years to optimize meat production and growth rate. A whole chicken of approximately 1.5 kilos is considered a medium-sized bird, larger than a broiler but smaller than a roasting hen, with tender, pale flesh suitable for a wide range of cooking methods.

The meat itself is classified as white meat on the breast and wings, with darker meat on the thighs and legs due to higher myoglobin content in those muscle groups. Chicken flavor is relatively mild and neutral, making it an excellent vehicle for spices, sauces, and aromatics across numerous cuisines.

Culinary Uses

A 1.5-kilo chicken is versatile enough for roasting whole, poaching, braising, or breaking down into parts for stews, curries, and pan-fried dishes. Whole roasting is particularly suited to this size, as the bird cooks through evenly while developing flavorful, crispy skin. The meat can be used interchangeably across European, Asian, and Mediterranean preparations—from French coq au vin to Thai curry to Italian cacciatore. Bone-in parts retain moisture and flavor better than boneless cuts, and the carcass yields excellent stock. This weight is ideal for feeding four to six people as a main course.
