Traditional cheddar is made from cow's milk through a process called "cheddaring," wherein curds are stacked, turned, and cut to expel whey before aging. The cheese develops a firm, slightly crumbly texture and a flavor profile ranging from mild and buttery (young cheddar) to sharp, complex, and slightly tangy (mature cheddar aged 1-5+ years). Shredded cheddar is simply aged cheddar cheese that has been mechanically cut into thin strands and typically coated with an anti-caking agent such as cellulose to prevent clumping and maintain flowability.

Cheddar varies by region and aging duration: mild cheddar has a creamy, gentle flavor; sharp cheddar develops a more pronounced, tangy character; and extra-sharp or vintage varieties possess intense, crystalline notes with a drier texture. Color ranges from pale ivory to deep orange, depending on the milk source and the addition of annatto (a natural coloring agent).
