celery cabbage

ProduceCelery cabbage is available year-round in most markets due to global cultivation and storage capabilities, though it is most abundant in fall and winter months in temperate regions, particularly September through March.

Celery cabbage is low in calories and a good source of vitamin C, vitamin K, and dietary fiber. It also contains sulfur compounds characteristic of cruciferous vegetables, which have potential anti-inflammatory properties.

About

Celery cabbage, also known as napa cabbage or Chinese cabbage (Brassica rapa subsp. pekinensis), is a leafy cruciferous vegetable native to East Asia, particularly China. It forms elongated, vertically-oriented heads with tightly packed, wrinkled leaves that range from pale green to cream-colored in the heart. The texture is crisp and tender, with a mild, slightly sweet flavor profile that is less sharp than common green or red cabbage. The edible portions include both the outer leaves and the inner core, all of which are consumed in various culinary applications.

The vegetable comprises approximately 95% water, with a dense arrangement of thin leaves that are easily separated. Napa cabbage became commercially significant in East Asia during the early 20th century and has since become a staple in Asian cuisines worldwide.

Culinary Uses

Celery cabbage is a cornerstone ingredient in East Asian, particularly Chinese, Japanese, and Korean cuisines. It is most famously used as the primary vegetable in kimchi, the fermented side dish essential to Korean meals, and is also fundamental to Chinese preparations such as stir-fries, soups, and dumplings. The vegetable's mild flavor and crisp texture make it suitable for both raw applications—in salads and slaws—and cooked preparations including braising, steaming, and quick stir-frying. Its thin leaves wilt easily, making it ideal for quick cooking methods. Beyond Asia, celery cabbage appears in contemporary fusion cuisines and is increasingly used in Western salads and vegetable preparations where its delicate texture is appreciated.
