Canned sliced mushrooms are preserved edible fungi that have been cleaned, sliced, and processed through thermal sterilization in a sealed container with liquid (typically water and salt) to extend shelf life. The most common species canned commercially is Agaricus bisporus, the same species as fresh button mushrooms, though cremini and portobello variants also appear in canned form. The canning process softens the mushroom tissue and concentrates its umami-rich flavor compounds, creating a tender product with a distinctly different texture from fresh mushrooms. Canned mushrooms retain nutritional value though some B vitamins and enzymes are reduced by the heat treatment.

The slicing occurs before canning, resulting in consistent pieces typically 3-5mm thick. The product is shelf-stable for 2-3 years unopened and requires no refrigeration until opened.
