DairyYear-round. As a shelf-stable processed product with a long shelf life (typically 2–3 years unopened), sweetened condensed milk is available throughout the year without seasonal variation.

Rich in calcium and a good source of protein due to milk solids; however, high in sugar (approximately 55 grams per 100ml) and calories. Contains saturated fat and lactose, making it unsuitable for lactose-intolerant or vegan diets.

About

Sweetened condensed milk is a processed dairy product created by evaporating approximately 50–60% of the water content from fresh milk and adding sugar (typically 40–45% by weight), resulting in a thick, creamy, pale product with an extended shelf life. The Nestlé Carnation brand, established in 1899, is one of the most widely distributed commercial versions globally. The product has a smooth, homogeneous texture and distinctly sweet flavor profile with subtle dairy notes. Unlike evaporated milk, which contains no added sugar, sweetened condensed milk undergoes a specific heating and concentration process that concentrates both lactose and milk solids while the high sugar content acts as a preservative, allowing unopened cans to remain stable for extended periods.

The ingredient was developed as a shelf-stable alternative to fresh milk for use in regions without reliable refrigeration, and became a staple in both professional and home kitchens. Modern versions are standardized to contain milk solids-not-fat (typically 8–10%) and milkfat (typically 8–10%), with the remaining composition being lactose, added sugars, and minimal additives.

Culinary Uses

Sweetened condensed milk is employed across diverse cuisines as both a binder and sweetening agent. In dessert preparation, it serves as the base for fudge, caramel sauce, dulce de leche, and various custard-based confections. Latin American cuisines incorporate it extensively into flans, tres leches cake, and chocolate preparations. Southeast Asian cooking uses it in coffee and tea beverages (Vietnamese cà phê đen, Thai iced tea), curries, and desserts. Bakers use it to add moisture, sweetness, and a creamy crumb to cakes, brownies, and pie fillings. The product is also employed in savory applications, including marinades, salad dressings, and creamy sauces. Its high sugar content makes it particularly valuable in no-cook or minimal-heat applications where fresh cream is unavailable.
