Black pepper (Piper nigrum) is the dried, unripe fruit (peppercorn) of a flowering vine native to Kerala in southwestern India. It is the most widely traded spice globally and constitutes approximately 20% of all spice commerce. The peppercorn develops a dark brown to black exterior when dried, revealing a pale interior with a characteristic pungent, slightly warm flavor profile dominated by the alkaloid piperine. Black pepper varieties vary by origin—Vietnamese, Indonesian, and Indian peppers exhibit distinct flavor intensities and aromatic profiles, with Vietnamese pepper typically being sharper and Indian pepper more complex.
