About

Bird chili, also known as bird's eye chili or Thai chili (Capsicum annuum var. acuminatum), is a small, thin-walled chili pepper native to Southeast Asia and Africa. These peppers typically measure 2–3 centimeters in length and range in color from green to red when mature. Despite their diminutive size, bird chilies are renowned for their intense, lingering heat, measuring 50,000–100,000 Scoville Heat Units (SHU), and possess a bright, slightly fruity flavor with grassy undertones. The pods are thin-skinned and densely seeded, making them ideal for drying and grinding into a spice powder.

When crushed, bird chilies release their potent capsaicin compounds and aromatic volatiles, creating a pungent spice with rapid heat onset. This form preserves the pepper's fruity notes while intensifying the burn, making it a versatile addition to countless dishes across Asian and African cuisines.

Culinary Uses

Crushed bird chili is a staple in Southeast Asian cooking, particularly in Thai, Malaysian, Vietnamese, and Indonesian cuisines, where it functions both as a table condiment and cooking ingredient. It is essential to dishes such as som tam (green papaya salad), curry pastes, and stir-fries, providing immediate heat and depth. The crushed form allows even distribution of heat throughout a dish while maintaining textural presence. In African cuisines, particularly Ethiopian and West African traditions, it serves as a base for spice blends and hot sauces. Crushed bird chili is also used in pickling, marinades, and as a finishing garnish for soups and noodle dishes. Its intensity requires judicious use; small quantities are typically sufficient to achieve desired heat levels.
