About
Begun is the Bengali and South Asian term for eggplant (Solanum melongena), a nightshade fruit that grows as a berry on herbaceous plants native to South Asia. Botanically a berry, begun is culinarily treated as a vegetable and features prominently in Bengali, Indian, and Pakistani cuisines. The fruit typically has a dark purple or violet skin with glossy appearance and creamy white flesh containing numerous small edible seeds. Regional varieties range from long and slender to round and bulbous forms. The flavor is mild and slightly earthy, becoming increasingly creamy and absorptive of other flavors when cooked.
Culinary Uses
Begun is a cornerstone ingredient in Bengali cooking, most famously prepared as begun bhaja (fried eggplant slices) and begun er dom (slow-cooked eggplant curry). Across South Asian cuisines, it features in baingan bharta (roasted eggplant mash), baingan fry, and vegetable curries. The vegetable's neutral taste and sponge-like texture make it ideal for absorbing spices and cooking liquids. It is commonly fried, roasted, curried, or stuffed with spiced meat or vegetable fillings. Begun is equally important in Indian regional cuisines—particularly in Odia, Assamese, and Gujarati cooking—where it may be prepared as chips, in dal-based curries, or combined with potatoes and onions.
