Spanish chorizo varies significantly: some versions are cured and sliced for charcuterie (chorizo seco), while others remain fresh and require cooking (chorizo fresco). Mexican chorizo tends to be fresher, spicier, and more heavily spiced with chiles and cumin, while Spanish varieties emphasize the smoky heat of paprika. The color ranges from deep red to orange depending on paprika content and curing methods.
