Baby peas are the immature pods and seeds of Pisum sativum, harvested at an early stage of development before full maturity. They are smaller and more tender than mature peas, with a delicate texture and sweeter, more subtle flavor profile. The entire pod, including the pea seeds inside, is typically consumed fresh. Baby peas are commonly available in two primary forms: sugar snap peas, which feature edible pods with sweet, tender peas inside, and snow peas, characterized by flat pods with small, tender peas that remain slightly underdeveloped. Both varieties originated in East Asia and have become staples in global cuisine.

Culinary Uses

Baby peas are prized for their tender texture and delicate sweetness, making them ideal for both raw and cooked applications. They are commonly used in stir-fries, particularly in Asian cuisines, where their crispness is preserved through quick, high-heat cooking. In Western cuisines, they appear in salads, vegetable medleys, and as a refreshing raw snack. Baby peas pair well with butter, garlic, mint, and light vinaigrettes.
