The avocado is botanically classified as a single-seeded berry with a large central pit surrounded by pale green to yellow flesh of creamy consistency. The flavor profile is mild, buttery, and slightly nutty, with minimal acidity compared to most fruits. Principal cultivars include Hass (with dark, pebbly skin and rich flavor), Fuerte (larger with smooth green skin), and Bacon (smaller with thinner skin). When diced, the flesh is cut into uniform cubes, typically ¼- to ½-inch pieces, immediately after cutting to minimize oxidation.

The diced form exposes greater surface area, accelerating browning; this is mitigated by tossing pieces with citrus juice immediately after cutting or holding them in acidulated water until service.
