Artichoke hearts are the tender, edible center portions of the globe artichoke (Cynara cardunculus var. scolymus), a perennial thistle-like plant native to the Mediterranean region. The heart comprises the pale, mild inner leaves and the fleshy receptacle (the base) beneath the tough outer bracts. Quartered artichoke hearts are these centers cut into four equal wedges, exposing the pale interior flesh. They have a subtle, slightly nutty and delicate flavor with a tender-firm texture when properly prepared. The hearts are prized for their tenderness and minimal fiber compared to outer leaves.

Artichoke hearts are commonly available both fresh and preserved—canned in brine, frozen, or packed in oil—with frozen and canned versions predominating in most modern kitchens due to convenience and year-round availability.
