Artichoke hearts are the tender inner portion of the artichoke (Cynara cardunculus var. scolymus), a perennial thistle native to the Mediterranean region. When the outer bracts and fuzzy choke are removed, the pale, edible heart remains—the most prized part of the vegetable. Cooked and drained artichoke hearts have a tender, slightly fibrous texture and a mild, nutty, subtly earthy flavor. The heart consists of the heart proper (the innermost tender leaves surrounding the heart base) and the expanded floral receptacle, both of which become soft and palatable when steamed, boiled, or roasted.

Fresh artichoke hearts are typically light green to pale ivory in color, while canned or frozen preparations may appear darker due to processing. The flavor becomes increasingly sweet and mellow as the hearts are cooked, with the fibrous texture softening to a yielding consistency.

Culinary Uses

Cooked and drained artichoke hearts are versatile in both Mediterranean and contemporary cuisines. They appear in salads, pasta dishes, risottos, and grain bowls, often paired with olive oil, lemon, garlic, and fresh herbs. In French cuisine, they feature in fricassées and braised preparations; in Italian cooking, they are stuffed, marinated, or incorporated into vegetable medleys (caponata, giardiniera). Artichoke hearts are also commonly used in dips, spreads, and as toppings for flatbreads and pizzas. Their mild flavor makes them compatible with robust ingredients like anchovies, capers, and aged cheeses, while their tender texture benefits from simple preparations that highlight rather than mask their delicate character.
