Pink pepper berries, also known as Peruvian pepper or false pepper (Schinus molle), are the dried berries of a South American tree in the Anacardiaceae family, unrelated to true black pepper (Piper nigrum) despite the common name. These small, spherical berries are approximately the size of peppercorns and range in color from pale pink to deep rose. The berries have a thin, papery shell that is brittle and easily crushed. Flavor-wise, pink peppercorns offer a distinct profile—mildly peppery with subtle fruity, floral, and slightly sweet notes, accompanied by a slight citrus undertone and a lingering, gentle heat that is considerably milder than black pepper.

The berries grow in large clusters on ornamental trees native to Peru, Bolivia, and other regions of South America. A related species, Schinus terebinthifolius (Brazilian pepper), also produces edible berries sold as pink pepper, though Schinus molle is generally preferred for culinary use due to its superior flavor balance.

Culinary Uses

Pink peppercorns are employed primarily as a decorative and flavor element in contemporary cuisine, particularly in French cooking and fine dining contexts. They are typically used whole, scattered atop dishes as garnish, or gently crushed and incorporated into spice blends, butters, and sauces. The berries' mild heat and fruity character make them suitable for delicate applications—finishing seafood preparations, infusing creams and vinaigrettes, or adorning charcuterie boards. They are sometimes combined with black, white, and green peppercorns in mixed peppercorn blends. Due to their visual appeal and subtle flavor, pink peppercorns complement fish, poultry, and light vegetable dishes without overpowering palates.
