Crabmeat is the edible flesh extracted from crabs (Decapoda order, family Cancridae and related families), marine crustaceans found in oceans and some freshwater environments worldwide. The meat is prized for its sweet, delicate flavor and tender texture, varying in color from white to deep reddish-brown depending on the crab species and anatomical section. Blue crabs, Dungeness crabs, and king crabs are among the most commercially harvested species. The meat is categorized by origin: lump crab (large pieces from body muscles), claw meat (darker, richer flavor from claws), and backfin (flake meat from the body). Surimi, by contrast, is a processed product made from minced white fish (typically pollock, cod, or other lean fish) that is washed, refined, and mixed with additives like starch and cryoprotectants, then shaped and cooked to mimic crabmeat texture and appearance—often sold as "imitation crab" or "crab stick."

Culinary Uses

Crabmeat is central to cuisines worldwide, from Asian crab dishes (crab fried rice, dim sum preparations) to European bisques and American crab cakes. Its mild sweetness and tender texture make it versatile for raw preparations (ceviche, sushi), hot dishes (stir-fries, pasta), and cold applications (salads, sandwiches). Surimi serves as an economical substitute in similar applications, particularly in Asian cuisines, and is commonly used in seafood sticks, crab cakes, and sushi preparations. Both are best used simply to showcase their natural flavor; minimal seasoning and careful handling preserve delicate texture.
