The shell, or exoskeleton, protects the muscle tissue beneath and is typically removed before cooking for culinary purposes. Shrimp vary considerably in size, from tiny species measuring just a few millimeters to larger varieties exceeding 12 inches in length; size classifications are often expressed as count per pound (e.g., 16/20 indicates 16-20 individual shrimp per pound). De-veining refers to the removal of the intestinal tract, a dark vein running along the dorsal side of the shrimp, which is performed for both aesthetic and textural reasons. Raw (uncooked) shrimp should be translucent with a grayish-pink hue; cooked shrimp turn opaque white or pink.
