Emirati cuisine is the culinary tradition of the United Arab Emirates, a federation of seven emirates situated at the southeastern tip of the Arabian Peninsula along the Persian Gulf and Gulf of Oman. It represents one of the most distinctly articulated regional expressions of Gulf Arab cookery, shaped by the ecological realities of desert, coast, and oasis environments inhabited by both settled agricultural communities and nomadic Bedouin peoples.\n\nAt its core, Emirati cuisine is built upon a tripartite ecological heritage: the date palm oasis (providing dates, a foundational caloric and ceremonial staple), the sea (yielding fish, dried shrimp, and salt-cured seafood), and pastoral desert life (supplying camel and goat meat, camel milk, and clarified butter known as samn). Rice, introduced through centuries of Indian Ocean trade, serves as the dominant grain base in most main dishes, and is invariably cooked with layered spice blends — including bezar, a regionally specific spice mixture incorporating dried limes (loomi), turmeric, cinnamon, and dried chilies — that distinguish Emirati flavor profiles from those of neighboring Gulf states. Slow cooking over low heat, communal platters, and a strong culture of hospitality (karam) structure the meal experience, with dishes such as machboos (spiced rice with meat or fish), harees (slow-cooked wheat and meat porridge), and balaleet (sweetened vermicelli with egg) anchoring the everyday and ceremonial repertoire.

Historical Context

The culinary identity of the UAE's constituent territories was forged over millennia by trade, ecology, and tribal social organization. The region's position along ancient Indian Ocean trade routes — connecting the Persian Gulf to the Swahili Coast, the Indian subcontinent, and Southeast Asia — introduced rice, tamarind, turmeric, cardamom, and dried chili peppers into a food culture that had previously relied on dates, dried fish, and animal products. By the medieval Islamic period, merchant networks through Hormuz and later Oman had made spiced rice dishes a prestige staple across the Gulf littoral. Portuguese incursions in the sixteenth century and subsequent British political influence from the nineteenth century onward added further layers but did not fundamentally alter the cuisine's Bedouin and maritime foundations.\n\nThe rapid economic transformation following the oil boom of the 1970s profoundly reshaped Emirati foodways: traditional subsistence patterns gave way to urbanized consumption, and large-scale labor migration from South and Southeast Asia introduced new ingredients and techniques into the domestic and commercial food environment. Despite this, a significant cultural revitalization movement — supported by state institutions such as the Abu Dhabi Culture Authority — has worked to document and preserve heirloom dishes, Bedouin food practices, and pearl-diving era food traditions as markers of national identity.

Geographic Scope

Emirati cuisine is practiced across all seven emirates of the United Arab Emirates — Abu Dhabi, Dubai, Sharjah, Ajman, Umm Al Quwain, Ras Al Khaimah, and Fujairah — with regional variation between interior desert, coastal, and mountain communities. The tradition is also maintained by Emirati diaspora communities and is increasingly represented in heritage restaurants and cultural festivals internationally.
