Slovak Red Cabbage

  1. Cook bacon in large skillet over medium heat until crisp and fat is rendered.
  2. Add onions, stirring frequently, until very soft, about 5 minutes.
  3. Add cabbage in four batches, mixing thoroughly after each.
  4. Stir in orange juice.
  5. Reduce heat to low; cook, stirring often, until cabbage is wilted, about 15 minutes.
  6. Stir in vinegar and sugar.
  7. Cook, stirring often, until very tender, about 15 minutes.
  8. Adjust seasoning.
