Ravishing Rhubarb Cake

  1. Preheat oven to 350 degrees. Coat a 9x13-inch baking pan with nonstick cooking spray.
  2. Beat eggs, salt, Sugar and vanilla in large bowl. Stir in flour, soda and cinnamon. Add applesauce, rhubarb and nuts; stir until well blended.
  3. Pour into prepared pan and bake for 1 hour. Cool; dust with powdered sugar. Yields 20 servings.
  4. Per serving: 130 calories; 2.8 g fat (0.3 g saturated fat, 19 percent calories from fat); 32 mg cholesterol; 78 mg sodium.
