Israeli Potato Salad

  1. Place unpeeled potatoes and eggs in pot of water, boil for 30 minutes.
  2. Set eggs aside.
  3. While still warm, peel potatoes.
  4. Set aside to cool.
  5. Slice potatoes into ½ inch cubes.
  6. Chop onions and add to potatoes, cube cucumbers.
  7. Add to potato-onion mixture.
  8. Mix mayonnaise, mustard, salt, pepper, vinegar and sugar together; add to potato mixture.
  9. Mix together.
  10. Chill.
  11. Then add hard boiled eggs to salad and serve.
