  1. Combine rice, celery, carrots and pepper in medium bowl.
  2. Blend mayonnaise, sour cream, salt, curry powder and lemon juice; toss with rice.
  3. Serve on lettuce leaves; top with diced carrots or grated coconut, if desired.
