Celeriac and Carrot Soup

Serve with garlic croutons and flat leaf parsley



  1. Heat the oil in a large heavy based pan fry the onion until soften.
  2. Add the celeriac and carrots and stir fry for about 5 minutes.
  3. Add the stock and seasoning and mix well.
  4. Cover the pan with a tight fitting lid and bring the soup slowly to the boil reduce the heat and simmer for about 20 minutes.
  5. Tip the soup into a blender and blend until smooth.
