Beet Salad II

This recipe is best if marinated for a few hours, stirring occasionally. imple and refreshing in the summer. Enjoy!



  1. Boil beets, covered in water for ½ hour, until skins can be easily peeled off and beet is soft when poked by fork.
  2. Peel and chop beets into small squares (about ½ inch).
  3. Slice onion into thin pieces.
  4. Squeeze lime juice over the beets, add the onions.
