Ingredients

  • For broth: 1 kg of mutton or Beef
    2 carrots, an Onion, 2 laurel leaves, 2 table-spoons of melted fat, 0,5 of a piala of katyk, dill, salt and pepper to taste.

    2 eggs, 50 g of water, a pinch of salt.

Method

Place bone-in mutton or beef into a large pot, cover with cold water, and bring to a boil over high heat. Skim off all foam and impurities that rise to the surface, then reduce heat to a gentle simmer.

Add a whole onion, carrot, bay leaves, black peppercorns, and salt to the pot. Continue to simmer uncovered, skimming occasionally, until the broth is clear and golden and the meat is fully tender.

While the broth simmers, prepare the kespe dough by combining wheat flour, an egg, a pinch of salt, and enough warm water to form a stiff, smooth dough. Knead firmly until the dough is elastic and uniform.

Roll the dough out on a lightly floured surface into a very thin sheet, then fold it loosely and cut into narrow flat strips roughly 2–3 mm wide. Separate the noodles and dust with flour to prevent sticking.
