Ingredients

• 4 cooked, diced potatoes
• 3 cooked, diced beets
• 3 cooked, diced carrots
• 1 small, chopped onion
• 2 chopped, hard boiled eggs
• 1 chopped pickle (or sub 1 tablespoon sweet relish)
• 1 cup cooked white beans
• 1 cup sour cream
• season with sugar, salt and pepper to taste.
