Description

Cold Asparagus soup [1][2] is a healthy light soup, nice for summer.


Ingredients

  • 2 cups (500 mL) asparagus, cut in 1 in. (2.5 cm) pieces
  • 2 stalks celery
  • 1 sprig parsley
  • pinch of tarragon (or thyme)
  • 1 tsp (5 mL) salt
  • 2 cups (500 mL) hot consommé
  • 1 cup (250 mL) light cream or milk
  • 1 chicken bouillon cube
  • minced chives (optional)

Procedure

Add all ingredients to a blender and mix. Heat in a pan, add garnishes of minced chives and/or cooked asparagus tips.
