Description
Cold Asparagus soup [1][2] is a healthy light soup, nice for summer.
Ingredients
- 2 cups (500 mL) asparagus, cut in 1 in. (2.5 cm) pieces
- 2 stalks celery
- 1 sprig parsley
- pinch of tarragon (or thyme)
- 1 tsp (5 mL) salt
- 2 cups (500 mL) hot consommé
- 1 cup (250 mL) light cream or milk
- 1 chicken bouillon cube
- minced chives (optional)
Procedure
Add all ingredients to a blender and mix. Heat in a pan, add garnishes of minced chives and/or cooked asparagus tips.
