Soy Sesame Snow Pea Salad with Water Chestnuts

  • Makes 6 servings.



  1. Bring a pot of water to a boil.
  2. Salt and add snow peas.
  3. Cook 3 min. Drain.
  4. In a bowl, combine peas, red pepper, chestnuts and scallions.
  5. Allow to cool.
  6. In a 2nd bowl, whisk soy sauce, hoisin, sesame oil and vinegar.
  7. Toss with vegetables.
  8. Serve at room temp or cold.
  9. Garnish with noodles and sliced scallions just before serving.
