Rice with Black Beans

  1. Sauté onions and garlic in a small amount of liquid (the original recipe called for oil, but I just used a little water) until tender.
  2. Stir in tomatoes, beans, water, and oregano.
  3. Bring to a boil.
  4. Stir in rice.
  5. Return to boil.
  6. Reduce heat, cover, and simmer for 5 minutes.
  7. Remove from heat.
  8. Let stand 5 minutes. That's it! enjoy!! :)
