Lithuanian coffee cake



  1. Soften yeast in water and sugar; set aside.
  2. Heat milk below boiling, add butter, sugar and salt.
  3. Cool and add eggs, 1 at a time, beating in bowl.
  4. Add flour, softened yeast and vanilla.
  5. Wait 15 minutes and knead dough until dough becomes satiny.
  6. Place dough in a greased bowl in a warm place.
  7. After it doubles in bulk (about 2 hours) punch down.
  8. Add 1 cup golden raisins and knead to distribute them.
  9. Divide in half and form 2 loaves.
  10. Allow to rise 1 hour.
  11. Bake 350°F for about 45 minutes.
