  1. Brown the roast( both sides) in a large enough pot in olive oil.
  2. Add the rest of the ingredients. Bring it to a boil then cover and reduce the heat.
  3. Cook for another 3 to 4 hours until meat is tender.
  4. Keep checking this because it might dry out. Add water if it does.
